Tofu with Cashews and Rice Recipe

This vegan tofu with cashews and rice recipe is flavorful and filling. The tofu is crispy and savory, with a nice crunch and nuttiness from the cashews. For a complete and satisfying meal, serve it over a bed of fluffy white rice.

  • Cook Time: 25 minutes
  • Total Time: 35 minutes

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Place the cashews on a baking sheet and toast for 5-7 minutes, or until lightly browned.
  • Place aside.
  • Bring the water to a boil in a medium pot.
  • Cover and simmer for 18-20 minutes, or until the water has been absorbed and the rice is tender.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Cook for 3-4 minutes, or until the tofu cubes are lightly browned.
  • To the skillet, add the soy sauce, garlic powder, ginger powder, salt, and pepper.
  • Cook for another 2-3 minutes, stirring constantly.
  • Toss the tofu and cashews with the rice.
