This hearty and comforting Vegan Zucchini Potato Casserole is ideal for a family dinner or a potluck. It's loaded with baked potatoes, zucchinis, onions, garlic, red bell pepper, and vegan cheese.

Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, heat the olive oil.
- Sauté the onion and garlic until soft.
- Stir in the sliced potatoes and zucchinis in the skillet.
- 5 minutes in the oven.
- Combine the red bell pepper, dried oregano, dried thyme, salt, and pepper in a mixing bowl.
- To combine, stir everything together.
- Spread the mixture evenly into a casserole dish.
- On top of the mixture, sprinkle with vegan cheese.
- Bake for 35-40 minutes, or until the cheese is melted and bubbly, in a preheated oven.
- Serve immediately.
