Vegan Zucchini Potato Casserole Recipe

This hearty and comforting Vegan Zucchini Potato Casserole is ideal for a family dinner or a potluck. It's loaded with baked potatoes, zucchinis, onions, garlic, red bell pepper, and vegan cheese.

  • Prep Time: 20 minutes
  • Cook Time: 40 minutes
  • Total Time: 1 hour

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a skillet over medium heat, heat the olive oil.
  • Sauté the onion and garlic until soft.
  • Stir in the sliced potatoes and zucchinis in the skillet.
  • 5 minutes in the oven.
  • Combine the red bell pepper, dried oregano, dried thyme, salt, and pepper in a mixing bowl.
  • To combine, stir everything together.
  • Spread the mixture evenly into a casserole dish.
  • On top of the mixture, sprinkle with vegan cheese.
  • Bake for 35-40 minutes, or until the cheese is melted and bubbly, in a preheated oven.
  • Serve immediately.
