Vegan Hazelnut Peanut and Pomegranate Soup Recipe

Instructions

  • In a large pot over medium heat, heat the olive oil.
  • Sauté the chopped onion until it is translucent.
  • Cook for another minute after adding the minced garlic and grated ginger.
  • Bring the vegetable broth and coconut milk to a boil.
  • Reduce the heat to low and leave for 15 minutes.
  • Remove from the heat and set aside for a few minutes to cool.
  • Blend the soup with an immersion blender until smooth.
  • To the soup, add the chopped hazelnuts, peanuts, and pomegranate arils.
  • Season to taste with salt and pepper.
  • Serve immediately.
