Vegan Mexican Burritos Recipe

These vegan Mexican burritos are an excellent choice for any meal. They're a healthy and delicious option that's packed with rice, black beans, and plenty of veggies.

  • Cook Time: 10 minutes
  • Total Time: 30 minutes

Instructions

  • Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  • Combine the cooked rice, black beans, red bell pepper, green bell pepper, red onion, jalapeño, olive oil, chili powder, cumin, smoked paprika, salt, and pepper in a large mixing bowl.
  • To coat, toss well.
  • Place the tortillas on a baking sheet and heat for 1-2 minutes, or until slightly warmed.
  • Divide the rice and bean mixture evenly among the tortillas, placing it in the center of each.
  • Serve with sliced avocado and chopped cilantro on top.
  • Fold the tortilla in half, then roll it up tightly from the bottom.
  • If desired, top the burritos with salsa and hot sauce.
