Vegan Zucchini Bread Recipe

This moist, flavorful, and simple vegan zucchini bread. It's a great way to use up your zucchini harvest from the summer.

  • Cook Time: 50 minutes
  • Total Time: 1 hour, 10 minutes

Instructions

  • Preheat the oven to 350°F (175°C).
  • Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a large mixing bowl.
  • In a separate mixing bowl, combine the applesauce, brown sugar, vegetable oil, and vanilla extract.
  • Mix the wet and dry ingredients together until just combined.
  • Incorporate the grated zucchini.
  • Pour the batter into a 9x5-inch loaf pan that has been greased.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow to cool in the pan for 10 minutes before removing to a wire rack to cool completely.
