Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Peel and mash the bananas in a mixing bowl.
  • Stir in the coconut oil, almond milk, maple syrup, and vanilla extract to the mashed bananas.
  • Whisk together the flour, baking soda, salt, and cinnamon in a separate bowl.
  • Stir together the dry and wet ingredients until just combined.
  • Line a muffin tin with paper liners and spoon the batter into each, about 2/3 full.
  • Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the muffins from the oven and set aside for a few minutes before transferring them to a wire rack to cool completely.
