Vegan Mediterranean Lasagna Recipe

This Vegan Mediterranean Lasagna is a delicious and nutritious take on a traditional Italian dish. It's a great weeknight meal that's high in protein and vegetables that the whole family will enjoy.

  • Prep Time: 30 minutes
  • Cook Time: 45 minutes
  • Total Time: 1 hour, 15 minutes

Instructions

  • Preheat the oven to 375°F.
  • Cook the lasagna noodles according to the package directions.
  • Combine chickpeas, spinach, sun-dried tomatoes, olives, parsley, basil, nutritional yeast, salt, and pepper in a large mixing bowl.
  • Cover the bottom of a 9x13 inch baking dish with marinara sauce.
  • Layer cooked noodles over the sauce, then the chickpea mixture, and finally the cashew ricotta.
  • Layer until all ingredients are used up, finishing with a layer of sauce on top.
  • Bake for 30 minutes, covered with foil.
  • Remove the foil and continue baking for another 10-15 minutes, or until the lasagna is heated through and the cheese is melted and bubbly.
  • Allow for a few minutes of cooling before serving.
