Vegan Cream of Cauliflower with Chickpeas Recipe

This vegan cream of cauliflower soup is creamy, rich, and flavorful. On a cold day, it's the ideal comfort food.

  • Prep Time: 15 minutes
  • Cook Time: 30 minutes
  • Total Time: 45 minutes

Instructions

  • Warm the olive oil in a large pot over medium heat.
  • Cook until the onion and garlic are softened.
  • Cook for 5 minutes after adding the cauliflower and chickpeas to the pot.
  • Bring the vegetable broth to a boil.
  • Reduce the heat to low and cook for 20 minutes, or until the cauliflower is tender.
  • Puree the soup with an immersion blender or in a blender until smooth.
  • Season with salt and pepper to taste after adding the coconut milk.
  • Serve immediately and enjoy.
