Instructions

  • Warm the olive oil in a large pot over medium-high heat.
  • Sauté the onion for 2-3 minutes, or until softened.
  • Cook for another 2-3 minutes after adding the garlic and bell pepper.
  • Combine the chili powder, cumin, smoked paprika, oregano, and salt in a mixing bowl.
  • Cook for another 1-2 minutes, stirring constantly.
  • Combine the brown rice, kidney beans, diced tomatoes, and vegetable broth in a mixing bowl.
  • Bring to a boil, stirring constantly.
  • Reduce the heat to low, cover, and leave to cook for 30-35 minutes, or until the rice is tender.
  • Serve immediately and enjoy.
