Instructions

  • Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  • Whisk together the all-purpose flour, almond flour, sugar, baking powder, and salt in a medium mixing bowl.
  • Melted coconut oil, almond milk, and vanilla extract should be combined in a separate bowl.
  • Mix the wet and dry ingredients together until well combined.
  • Incorporate the chopped almonds.
  • Form the dough into a 12-inch-long, 2-inch-wide log and place it on the prepared baking sheet.
  • Bake for 25-30 minutes, or until lightly golden brown and firm.
  • Remove the log from the oven and set aside for 10 minutes to cool.
  • Cut the log into 1/2-inch thick slices with a sharp knife.
  • Place the slices flat on a baking sheet and bake for another 10-15 minutes, or until dry and crispy.
  • Allow the biscotti to fully cool before serving or storing in an airtight container.
