Vegan Muffins Recipe

These vegan blueberry muffins are a tasty and nutritious breakfast option. They are low in fat and sugar, but high in flavor, because they are made with fresh blueberries and almond milk.

Ingredients

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Instructions

  • Preheat the oven to 400°F.
  • (200 degrees C).
  • Grease or line muffin cups with muffin liners.
  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  • Combine the vegetable oil, applesauce, almond milk, and vanilla extract in a separate bowl.
  • Stir together the wet and dry ingredients until just combined.
  • Incorporate the blueberries.
  • Fill muffin cups about 2/3 full with batter.
  • Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  • Allow muffins to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
