Vegan Chickpea and Tomato Sub Recipe

This vegan chickpea and tomato sub is a filling and flavorful sandwich that comes together quickly. The chickpeas are cooked with fragrant spices and served with creamy hummus and fresh parsley on a soft sub roll.

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes

Instructions

  • Warm the olive oil in a large skillet over medium heat.
  • Cook for 1 minute, or until the garlic is fragrant.
  • Cook for 8-10 minutes, or until chickpeas are lightly browned and tomato is soft, in a skillet with chickpeas, tomato, red onion, cumin, paprika, salt, and pepper.
  • Half the sub rolls and spread hummus on one side.
  • Sprinkle with fresh parsley and top with chickpea and tomato mixture.
  • Serve right away.
