Vegan Middle Eastern Falafel with Chickpeas Recipe

This vegan falafel recipe uses chickpeas, herbs, and spices to make a traditional Middle Eastern dish. It's ideal for a quick lunch or dinner, and it goes well with pita bread, salad, or as a sandwich.

  • Cook Time: 20 minutes
  • Total Time: 35 minutes

Instructions

  • Place the soaked chickpeas in a food processor and process until smooth.
  • In a food processor, combine the onion, parsley, cilantro, garlic, cumin, coriander, baking powder, flour, and salt.
  • Pulse the mixture until it forms a coarse paste.
  • Refrigerate the mixture for at least 30 minutes in a bowl.
  • Make small balls or patties out of the mixture.
  • In a large frying pan, heat the oil over medium-high heat.
  • Fry the falafel for 3-5 minutes per side, or until golden brown and crispy.
  • Remove from the pan and drain on a plate lined with paper towels.
  • Serve with pita bread and tahini sauce, if desired.
