Vegan Falafel and Pita Bread Recipe

- In a food processor, combine chickpeas, onion, parsley, cilantro, garlic, cumin, salt, and black pepper until a coarse mixture forms.
- Add the flour and pulse again until well combined.
- Make small balls or patties out of the mixture.
- In a frying pan, heat the oil over medium-high heat.
- Fry falafel on all sides until golden brown, about 2-3 minutes per side.
- In a mixing bowl, combine the flour, salt, sugar, and yeast.
- Stir in the warm water until a dough forms.
- Knead the dough for 5-10 minutes on a floured surface, or until smooth and elastic.
- Cover the dough with a damp cloth in a clean, oiled bowl.
- Allow the dough to rise for 1 hour.
- Preheat the oven to 450°F.
- Roll the dough into 8 equal parts and shape into balls.
- Each ball should be rolled into a thin, flat circle.
